SPRING SOUP

Whenever the season starts to warm the soil, the sun stays a little longer, and the perennial chive plants peeks its way out to say hello...this is my go-to soup. Not only is it full of flavor, but it is packed with antioxidants and green. Perfect to welcome the spring days & a little leprechaun magic (should you need it).

INGREDIENTS

  • 1 Tablespoon, Extra Virgin Olive Oil

  • 3 Leeks, cleaned well, sliced and halved

  • 6-8 small Potatoes (2 inches), quartered

  • 1 Onion, diced

  • 6 cups Broth

  • ½ cup Kefir* (optional, can substitute with sour cream, cream cheese, cheese)

  • 2 Tablespoon Chives, chopped (1 Tablespoon for garnish)

  • Salt & Pepper, to taste

PREPARATION

  1. On medium heat, in a large stock pot, add olive oil and sauté garlic and onions with salt and pepper for 3-4 minutes, or when aroma is released and they are tender

  2. Add leeks and cook another 2-3 minutes, stirring occasionally to not burn ingredients

  3. Add potatoes and enough broth to cover completely, simmer for around 24 minutes or until potatoes are soft enough to fall apart when poked with fork. To speed process, you can cover pot with lid, just make sure the pot does not overboil and liquid spills out

  4. This may need stirring throughout the cooking process, you may need to add more salt and pepper, adjust per taste

  5. When you have about 5 minutes left, add 1 Tablespoon of fresh chives

  6. Puree soup to remove lumps and bumps, and place serving into bowls

  7. Garnish with a few tablespoons of kefir and fresh chives

  8. Enjoy!
