VANILLA EXTRACT
This is the BEST vanilla extract and I’ve been making my own for 12 years. I’ve tried various liquors and find that the rum (light or dark) makes the best extract, giving it slightly sweeter notes which makes for absolutely amazing baked goods. I try to always be on the lookout for vanilla pods and sometimes make extract batches so I don’t run out during the holiday season or birthday season (for me, it’s May & October for my girls). This also makes a fantastic gift for family and friends who love to bake.
PREPARATION

Use a glass bottle with a lid, preferably a wire bail swing top or mason jar.

Add the vanilla pods into the bottle

Fill the bottle with rum to fully cover the vanilla.

Cover the bottle with the lid.

Set bottle in a dark pantry or cupboard.

Shake everyday or a few times a week to help infuse the rum with the vanilla.

After about 6 months, your vanilla extract will be ready to use.

I leave the vanilla pods in to allow the opportunity to use the pods (scraping the seeds out) for a more intense vanilla flavor.

*You can choose any type of alcohol be it vodka to rum, I find rum makes the best vanilla. You can also use any % proof Alcohol that fits your budget. I usually use an 80% proof alcohol.
