AIRY PB YOGURT CUPS
These are a sweet treat to enjoy that are full of some yummy protein and calcium with a hint of sweetness. I initially made these as frozen balls, but they just didn't work as well, so instead, they are portioned into cups that you can store in the fridge and enjoy as a little cup. If you do make them into frozen balls, the chocolate does not stick well on them, so you have to act quickly. Either way, they are a nice way to harness your sweet tooth while also having a nice dose of protein to tide you over.
PREPARATION

In a medium size bowl, mix together yogurt, peanut butter and maple syrup

Evenly divide into 4 containers that are freezer/fridge safe like a glass jar

Place into freezer, lying flat

Freeze for 2 hours or until desired effect (hardened to continue to next step)

Place chocolate chips into microwave safe container (glass jar or place on double boiler and add coconut oil until melted and mixed). If using microwave, place parchment paper over bowl and heat on half speed for 20 second intervals

Remove and add coconut oil, stir until mixed well

Allow chocolate to cool down for a few minutes and remove cups from freezer

Gently pour onto cups, spreading out chocolate mixture, cover with a wrap

Place back into freezer for 30 minutes or until desired effect, or place in fridge until ready to eat.

If in freezer, take out and place in fridge until ready to eat
